Ingredients

 

  • 1 tablespoon orange, lemon, or lime juice 
  • 1/4 teaspoon smoked paprika 
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground cumin 
  • 1/8 teaspoon chipotle powder
  • 1/8 teaspoon cinnamon 
  • 1 teaspoon kosher salt 
  • 1 tablespoon sugar or coconut sugar (optional) 
  • 1 1/2 cups raw pepitas 

 

Instructions

 

1. Heat your oven to 325ºF and line a rimmed baking sheet with parchment paper. 

2. Combine all the ingredients in a medium bowl and toss to coat. Spread out on the prepared baking sheet and bake for 8-10 minutes, or until the pepitas puff up a bit and are completely dry. They will continue to crisp as they cool. 

3. Store in an airtight container at room temperature and sprinkle on all your salads, soups, tacos, or just have them as a snack.
