It’s October! Seriously how did that happen? I swear I was just in Mexico celebrating the New Year but somehow, we’re 10 months in. This year FLEW by, and I’m exhausted. Are you exhausted? I hope you’re hanging in there, everyone I know is pretty stressed.

With that in mind, I’ve got some easy recipes for you for next week. And also some coffee cake and one of my favorite cocktails.

One skillet, meat, veg, tons of flavor, done in 30 minutes. That’s the name of the game with this CHILE BASIL PORK. Mix it up with any meat and veg you’ve got on hand!

lemon tahini dressing

Roast up some veggies, some chicken, or make a batch of Chicken Shawarma, and drizzle this LEMON TAHINI DRESSING over all of it.

Who needs a little comfort food lately? I do! I do! You, too? This TUSCAN TOMATO SOUP will hit the spot, and is simple to whip up.
