What To Cook Next Week: Comfort foods, my favorite Fall salad, and more.
First of all, there are 26 days until the midterm elections. I’m telling you this because I (me, Simone, the person who posts every single piece of content on this blog, for free, for you) feel that it’s a very important election. There’s a lot of stake, and I hope that if you’re not registered to vote that you do so and use your voice. If you think it’s preposterous that I mention “politics” on a food blog (if me encouraging you to vote can even be classified as that), I invite you to read more about my thoughts on that in this post. Or, if you don’t care what my thoughts are on the matter and are just appalled, you’re welcome to not visit this blog anymore. That’s how the internet works! It’s a choose your own adventure type of situation. If you choose to stick around, awesome. I am not going anywhere.

We could all use a little comfort food, right? This Pressure Cooker Pot Roast & Gravy is the epitome of comfort food, without the usual time involved in a braise.

This Harvest Chicken Soup, to me, is basically Fall in a bowl. The broth is richly flavored by the roasted chicken and vegetables, and the optional Sweet Potato Gnocchi are the perfect carby goodness.

I ate this Sesame Spinach & Citrus Salad more times that I could count last Fall and Winter. It’s SO good.

Have a little time this weekend? Make a batch (or a double batch!) of my almost famous NY Style Paleo Pizza Crust. It freezes wonderfully, and you’ll be super happy to have it later on for a quick meal.
