What To Cook Next (Thanksgiving!) Week

Well friends, it’s officially the week before Thanksgiving. That came up quick! If you’re anything like me, you’ll be focused on your Thanksgiving menu and completely forget that you also need to eat Monday through Wednesday. Ack!

So here’s what I recommend. First, make sure you’ve downloaded my Thanksgiving Guide, so you can get a head start on all the things you can make ahead of time (Good news! It’s a lot!) In this guide, you’ll also find all of my Thanksgiving recipes, plus a portion planner, and of course make-ahead tips for each and every recipe and a general make ahead guide. All free! Because I want you to pull off the best Thanksgiving ever and feel like a total pro, whether you’re hosting or just bringing one dish.

 

As far as Monday – Wednesday, let’s cook up some SUPER simple dishes like:

Instant Pot Green Curry Chicken – Set it and forget it, while you work on Thanksgiving prep!

 

slow roasted salmon

I know what you’re thinking. SIMONE, that does NOT look simple and fast. But it is! Really all it involves is slicing up some citrus and a jalapeño, toss in oil, plop it on some salmon, and throw it in the oven. It cook in less than 30 minutes and is light and delicious and perfect for the days leading up to eating too much turkey and stuffing.

Spicy Roasted Romanesco with Lemon & Capers – Chop it up, toss it with some stuff, and roast. Easy and delish!

And let’s not forget about the reason we’re excited for the week ahead… Here are my most favorite Thanksgiving recipes:

Have you guys realized yet that I’m a poultry whisperer? I am. Trust this turkey. The recipe, not me. There’s a gravy recipe in here, too.

Sourdough & Mushroom Stuffing. Honestly I have a bunch of stuffing recipes and picking a favorite was tough. But this is what we’re having this year. It’s really tasty and I’m excited for it.

I just posted this recipe this week, and I think it’s my absolute favorite fall salad. Perfect for your Thanksgiving Table!

Cranberry Curd Tart. Wouldya look at this thing? It’s just so naturally photogenic, a total show stopper, and the perfect sweet-tart finish to a rich and heavy meal.

    I downloaded your guide last year and made the spatchcocked turkey (first time ever!) and the gravy! It was super easy and literally the BEST turkey I ever made or had! My father-in-law who is often hard to please, raved about how it was the best turkey he had ever eaten! I had the butcher spatchcock it for me so I didn’t have to wrestle a 12 pound bird and the dry-brining was sooooo much easier than brining in water! Your preparation and cooking instructions were clear and easy to follow! The day-by-day instructions were a life-safer and took out all the guess work! I also appreciated how much faster the turkey cooked with the spatchcocking…very important when you have an eager hungry gang! I will be cooking my turkey this way again this year and from here on out!
